Mallorcan almond biscuits

Ingredients for 1 servings:

  • 20 skinless almonds
  • 1 tsp lemon zest
  • 300 g sugar
  • 400 g almonds, ground
  • 4 eggs
  • possibly lemon juice

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Traditional biscuits with ground almonds and a light lemon flavor.

Preheat the oven to 180°C (top/bottom heat) (150°C fan/convection oven). Blanch the almonds, peel off the skins, and halve them. Mix the ground almonds with the lemon zest and sugar. Separate the eggs and add the egg yolks to the almond mixture, then mix well. Beat the egg whites until stiff and gently fold them into the batter; the batter should be very soft. Add a little lemon juice if it’s too stiff. Line a baking sheet with baking paper. Use an ice cream scoop to place small mounds of dough onto the sheet, leaving enough space between each one, as the dough will spread during baking. Top the almond biscuits with the halved almonds. Bake in the preheated oven for about 20 minutes. These biscuits are perfect with a cup of coffee. Approximately 165 kcal per biscuit.
