Quark cake with fruit

Ingredients for 1 servings:

  • 2 eggs
  • 4 tbsp sugar
  • 4 tbsp oil
  • 4 tbsp flour
  • 1 tsp baking powder
  • 4 eggs
  • 150 g sugar
  • 2 lemons
  • 750 g quark, 40% fat
  • 8 sheets of gelatin
  • n. B. Pineapple pieces or fruit as desired

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Mix the eggs, sugar, oil, flour, and baking powder into a smooth batter. Line a springform pan with baking paper and spread the batter evenly. Bake the base in a preheated oven at 170°C (top/bottom heat) for about 7-10 minutes. Then let it cool. For the quark mixture, beat the eggs and sugar until creamy. Add the lemon juice and quark and mix well. Soak the gelatin leaves in cold water for about 10 minutes. Then squeeze out any excess water and heat gently until completely melted. Stir one to two tablespoons of the quark mixture into the gelatin to equalize the temperature. Then quickly stir the gelatin into the remaining quark mixture. Place a cake ring around the cake base. Pour the quark mixture evenly over the cooled cake base. Sprinkle with finely chopped pineapple or other fruit, if desired. Let the cake set in the refrigerator.
