Ingredients for 1 servings:

  • 9 eggs
  • 1 pinch of salt
  • 375 g sugar
  • 300 g almonds, ground
  • 175 g almonds, chopped
  • 1 tsp vanilla sugar
  • 1 tsp cinnamon
  • 1 organic lemon(s), grated peel
  • some powdered sugar for dusting

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Separate the eggs. Beat the egg whites with the salt in a large mixing bowl until stiff peaks form. Gradually add 200g of sugar. Combine the egg yolks with the remaining ingredients. Carefully stir in the beaten egg whites. Grease a 26cm springform pan. Pour the mixture into the pan, smooth it down, and bake in the preheated oven for 50 to 60 minutes. Dust the cooled almond cake with powdered sugar before serving.
