Ingredients for 1 servings:
- 150 g butter
- 150 g almond(s), peeled, ground
- 3 eggs
- 1 pinch of salt
- 125 g sugar
- 1 tsp orange(s), organic, grated peel
- 7 tbsp orange juice
- 50 g flour
- ½ tbsp baking powder
- powdered sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Preheat oven to 180°C (160°C fan-assisted oven). Grease a small springform pan (20 cm diameter) with one tablespoon of butter and sprinkle with two tablespoons of almonds. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Gradually add 50g of sugar while stirring and continue beating for about a minute. Beat the remaining butter, 75g of sugar, and orange zest until very creamy. Add the egg yolks and beat for a minute. Mix the flour, the remaining almonds, and baking powder and stir into the butter and egg mixture in portions, alternating with the orange juice. Fold in the beaten egg whites and pour the batter into the springform pan. Bake on the middle rack of a hot oven for about 30 minutes. (Test with a wooden skewer for doneness.) After baking, let cool in the pan for 10 minutes, then turn out onto a wire rack and dust thickly with powdered sugar.
