Mallorcan Almond Cake

Ingredients
 

For the dough:

  • 6 Egg yolks
  • 200 g Powdered sugar
  • 1 packet Vanilla sugar
  • 1 packet Grated lemon peel
  • 1 tbsp Lemon juice
  • 1 pinch Cinnamon
  • 200 g Ground almonds
  • 6 Egg Whites
  • 1 pinch Salt

To sprinkle:

  • Powdered sugar

Instructions
 

For the dough:

  • Separate the eggs and place the yolks in a mixing bowl.
  • Add powdered sugar and vanilla sugar and stir.
  • Add lemon zest, lemon juice and cinnamon and stir.
  • Add the almonds and stir in.
  • Beat egg whites with salt until stiff and fold in.
  • Pour the dough into a mold (24 cm diameter).
  • Bake at 190 degrees (top and bottom heat) for about 45 minutes.

To sprinkle:

  • After baking, sieve some powdered sugar over the top.
