Ingredients for 4 servings:
- 24 garlic cloves
- 4 slices wholemeal toast, in crumbs
- 4 tbsp olive oil
- 4 tomatoes, peeled, diced
- 1 liter vegetable broth
- 1 bay leaf
- ½ tsp oregano
- 1 pinch of chili powder
- 1 tbsp parsley, finely chopped

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes
Sopa de ajo, for true garlic fans!
Briefly fry the garlic and bread in olive oil, stirring occasionally. Add the tomatoes and cook briefly while stirring. Pour in the broth, season with bay leaf, oregano, and chili. Cover and simmer the soup for 20 minutes, until the garlic cloves are soft. Remove the bay leaf, puree the soup with a hand blender, strain through a sieve, and serve garnished with parsley.
