Ingredients for 1 servings:

  • 5 eggs
  • 2 cups sugar
  • 1 cup oil (sunflower oil)
  • 5 cups flour
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 1 can of mandarin orange(s), possibly 2
  • 1 handful of almond flakes

Working time approx. 10 minutes; Total time approx. 10 minutes

Sheet cake, simple, quick and moist

Drain the mandarins and set aside the juice. Whisk together the eggs, mandarin orange juice, sugar, oil, flour, baking powder, and vanilla sugar. Finally, briefly stir in the mandarins. If you like, you can also stir in the mandarins from a second can, but without the juice. Spread the fairly runny batter on a greased baking sheet. Bake in a preheated oven at 225°C for 15-20 minutes. After a short baking time, sprinkle the sliced ​​almonds over the cake, then continue baking. Do the toothpick test! I often bake the cake with half wholemeal flour and half white flour, preferably spelt, but in these cases I prefer to use brown sugar and a little less of the latter. It tastes really good, too!
