Mandarin cake from the tray

Ingredients for 1 servings:

  • 350 g butter
  • 350 g sugar
  • 1 packet of vanilla sugar
  • 6 eggs
  • 350 g flour
  • 3 tsp baking powder
  • 6 g orange peel, untreated, grated
  • 3 small cans of mandarin oranges, 175 g each, drained
  • 250 g powdered sugar
  • n. B. Mandarin juice from the can

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 20 minutes

makes 25 pieces

Cream the softened butter with the sugar and vanilla sugar until fluffy. Beat in the eggs, one at a time. Combine the flour and baking powder and stir in along with the orange zest. Fold in the drained mandarins. Spread the batter onto a baking sheet lined with baking paper and bake in a preheated oven at 150°C (top/bottom heat) for about 20 minutes (test with a toothpick). Mix the powdered sugar with the mandarin orange juice to form a glaze and glaze the cake. Allow to set, then cut into about 25 pieces.
