Ingredients for 4 servings:
- 250 g butter (no margarine!)
- 500 g flour
- 2 eggs
- 300 g sugar
- 250 g almonds, sweet, whole
- Salt
- 10 g cinnamon (= 2 heaped teaspoons)
- ½ pack of baking powder
Instructions
Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes
Christmas biscuits; tastes similar to speculatius
Peel the almonds and leave them whole! Dough: Melt the butter (do not brown!) and mix with the sugar. Add the eggs, cinnamon, salt, and whole almonds. Mix everything well (do not use a mixer, only by hand, as otherwise the almonds will break). Add the flour mixed with the baking powder. Knead well. The dough should be very firm. Dust a wooden board with flour. Form 4 to 5 small loaves. Let rest in the refrigerator for 24 hours. Cut thin, knife-thick slices before baking. Grease the baking tray well or use baking paper. Bake until golden brown. Remove the pastry from the tray while it is still hot, as it will otherwise stick.
