Mango and spinach salad with feta cheese and roasted pine nuts

Ingredients for 2 servings:

  • 250 g fresh leaf spinach (baby spinach)
  • 1 mango(s)
  • ½ pack of pine nuts
  • ½ pack of feta cheese
  • some Parmesan (Grana Padano)
  • some cream of balsamic vinegar
  • some balsamic vinegar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Wash and trim the baby spinach. Meanwhile, toast the pine nuts in a pan over medium heat without any fat. Peel the mango and cut into small, irregular pieces. Cut half a pack of feta cheese into irregular pieces and toss everything with the spinach. Mix in a little balsamic vinegar. Arrange the salad on a plate and garnish with the pine nuts, some grated Grana Padano, and balsamic vinegar. Serve.
