Mango Lassi
The perfect mango lassi recipe with a picture and simple step-by-step instructions.
For the coconut cubes:
- 80 g Yogurt, plain (without additives)
- 160 g Coconut water, ice cold
- 2 tbsp White sugar
- 2 pinch Cardamom powder
- 2 drops Vanilla extract
- 2 tbsp Lime juice
- 1 pinch Salt
- 200 g Creamy coconut milk (24% fat)
- 2 tbsp White sugar
- 2 tsp Agar-Agar powder
Optional:
- 6 Ice cubes
To garnish:
- 6 Coconut cubes
- 6 Paprika powder, mild
- 6 Mango pieces
- 6 Lime pieces
- 6 Flowers and leaves
- For the coconut cubes, heat the coconut milk with the ingredients while stirring. Simmer for a minute and pour into a flat plate. Let cool in the fridge. Cut the solidified mass into small cubes. Freeze unused cubes in portions.
- Put all the ingredients for the lassi in the blender and puree for 30 seconds at the highest speed. Pour into sufficiently large glasses. Optionally, add 3 ice cubes, garnish and serve with a straw and long-handled spoon.
