Papaya Lassi

Ingredients
 

Optional:

  • 80 g Yoghurt (without additives)
  • 160 g Whole milk, ice cold
  • 2 tbsp Sugar, whiter
  • 1 tbsp Honey, bright
  • 2 Pinches Cardamom powder
  • 1 Pinches Salt
  • 3 tbsp Fresh lime juice
  • 6 Ice cubes

To garnish:

  • 6 Papaya pieces
  • 6 Lime pieces
  • 6 Flowers and leaves
  • 6 Coconut milk cubes

Instructions
 

  • For the fresh lime juice, wash a lime and cut off a piece lengthways to the right and left of the stem base. Core the sections and press out by hand. Discard the empty sections and the middle section (contains bitter substances).
  • Wash a papaya, cut off a sufficiently large piece, peel, core and cut into small pieces.
  • Put all the ingredients for the lassi in the blender and puree for 30 seconds at high speed. Pour into sufficiently large glasses. Optionally, add 3 ice cubes per glass, garnish and serve with a straw and long ice spoon.
