Ingredients for 2 servings:
- 300 g flour
- 115 ml milk
- 60 ml water
- 20 g butter
- ½ sachet of dry yeast
- 1 tbsp sugar
- 1 tsp salt
- 1 egg(s)
- 1 tbsp sesame seeds
- 250 g salmon, fresh or frozen
- 10 sprigs fresh parsley, finely chopped
- 12 g ginger, finely grated
- ¼ lemon(s), juice
- salt and pepper
- 2 tbsp butter
- ½ mango(s)
- ¼ cucumber(s)
- Sambal Oelek
- Mango chutney

homemade gourmet burger
For the hamburger buns, mix the flour, yeast, sugar, and salt. Gently heat the milk, water, and butter in a saucepan and add to the mixture. Add the egg whites and 1/2 of the egg yolk, mix well, and knead into a smooth dough for about 5 minutes. Set the remaining egg yolk aside. Form 4 equal-sized dough balls and flatten them slightly on a sheet of baking paper. Cover with a towel and let rise for 45 minutes. Preheat the oven to 200°C (top/bottom heat). Brush the buns with the remaining egg yolk and dust with sesame seeds. Bake for about 12 minutes, then let cool. For the salmon burger patties, finely chop the salmon with a knife and place in a bowl. Add the lemon juice, salt, pepper, chopped parsley, and finely grated ginger. Mix all ingredients well and shape into four even balls by hand, pressing out as much liquid as possible. Heat the butter in a non-stick pan. Flatten the salmon balls into burgers and fry for about 3 minutes on each side. Thinly slice the fresh mango and cucumber. Cut the buns in half and reheat briefly in the oven if necessary. Spread the top and bottom with sambal oelek and/or mango chutney. Top the bottoms with the cucumber and mango slices and the salmon burger. Cover, and your gourmet burger is ready! This recipe makes 4 small burgers and is enough for two very hungry people.
