Ingredients for 1 servings:

  • 50 g oat flakes, fine
  • ½ tsp salt
  • 50 g apple, peeled, pitted weighed
  • 250 g natural yogurt (3.5% fat)
  • 7 g yeast, fresh
  • 15 g oil
  • 250 g wheat flour (type 405)
  • Flour for dusting

Working time approx. 15 minutes; Rest time approx. 3 hours 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours 15 minutes

Pour the oats, salt, and finely grated apple over the yogurt, stir, and let stand for about 1-1.5 hours. Add the crumbled yeast, oil, and flour. Knead all ingredients thoroughly in a food processor until the dough pulls away from the bowl (add 1 tablespoon of flour if needed). Cover and let rise in a warm place until tripled in size. Knead thoroughly again (a food processor will do this, too) and form a loaf. Cover and let rise in a warm place until doubled in size. Dust the top with flour. Bake in a preheated oven at 200°C (180°C fan oven) for about 30 minutes.
