Ingredients for 4 servings:
- 1 mango(s), fully ripe
- 1 chili pepper(s), red, pitted
- 1 tbsp brown sugar
- 1 tsp lime(s) – zest
- 3 balls of mozzarella (buffalo mozzarella)
- 2 stalks of lemongrass
- 2 tbsp coriander, alternatively parsley
- 50 g nuts (macadamia or peanuts), unsalted, chopped
- 2 limes, the juice
- 1 tbsp olive oil
Instructions

Summer food
Peel the mango and cut into slices, removing the stone. Drain the mozzarella in a sieve and cut into slices. Arrange the mango and mozzarella slices in a shingle pattern on a rimmed plate. Remove the tough leaves from the lemongrass and cut the soft part into thin rings, then chop finely. Grate the zest of a lime and place it in a bowl with the lemongrass. Juice the limes and add them to the lemongrass along with the brown sugar. Deseed the chili and finely dice. Chop the coriander. Mix everything well with the olive oil and the other ingredients until the sugar dissolves. Pour over the mango and mozzarella slices and sprinkle with chopped nuts.
