Tortellini with dried tomatoes

Ingredients for 4 servings:

  • 500 g tortellini, fresh, filled with spinach or cheese, or mixed
  • 1 pack of bacon
  • 1 jar dried tomatoes in oil
  • 1 cup of cream
  • 1 cup crème fraîche garlic
  • 1 cup vegetable broth or yeast broth
  • basil
  • some oil for frying
  • Pepper (steak pepper)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat water for the tortellini. Cut the tomatoes and bacon into strips. Pour about half of the oil into a sufficiently large pot and slowly sizzle the bacon in it. Once the bacon is browned, add the stock, crème fraîche, and cream, and stir the tomatoes into the sauce. Bring to a boil and simmer for about 5 minutes to reduce the sauce. Finally, stir in the chopped basil and pepper. Drain the tortellini after the specified cooking time and carefully toss them with the sauce. Serve with a light red wine and perhaps some ciabatta. Tip: You can use ravioli instead of tortellini, and smoked salmon instead of bacon.
