Mannemer Filth with Champagne Fruits
The perfect mannemer filth with champagne fruits recipe with a picture and simple step-by-step instructions.
Champagne fruits (prepare the day before!)
- 650 g Berry mix
- 60 g Sugar
- 6 sheet Gelatin white
- 200 ml Champagne
- 3 tbsp Lemon juice
- 300 ml Cream
- 1 packet Bourbon vanilla sugar
- 2 tbsp Chocolate grated white
- 2 tbsp Chocolate grated dark
Mannemer filth
- 100 g Marzipan raw mass
- 100 g Ground hazelnuts
- 100 g Ground almonds
- 100 g Ladyfingers
- 100 g Citronat (Succade)
- 30 g Flour
- 10 g Cocoa powder
- 10 g Ginger bread spice
- 10 g Cinammon
- 5 g Clove powder
- 50 ml Cream
- 5 Pc. Protein
- 150 g Sugar
- 100 g Semi-Dark couverture
- 100 g Light couverture
- 1 Packet Baking wafers
Champagne fruit
- For the champagne fruits, bring the washed and, if necessary, chopped berries to the boil with a little water and the sugar.
- Soak the gelatine in cold water. Divide the boiled berries into 5 dessert glasses or bowls (fill up to a maximum of half), then dissolve the gelatine in the hot, but no longer boiling fruit juice and fill up with champagne and lemon juice.
- Pour the champagne fruit juice over the berries. Leave to set in the refrigerator overnight. Before serving, whip the cream with the vanilla sugar until stiff and pour over the champagne fruits. Decorate with chocolate shavings and fresh berries.
