Maple Walnut Tartlets

Ingredients for 1 servings:

  • 175 g butter
  • 100 g sugar
  • 2 egg yolks
  • 175 g flour
  • 100 g cornstarch
  • 50 g walnuts, chopped
  • 150 g chocolate
  • 25 g butter
  • 1 tbsp sugar
  • 2 tbsp maple syrup
  • 75 ml cream

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Delicate walnut cookies filled with maple chocolate cream

Mix the flour with the cornstarch and sugar. Sprinkle the butter in flakes over the dough. Add the egg yolks and knead everything into a smooth dough. Stir in the walnuts and form the dough into an even log. Wrap in cling film and chill for at least 2 hours. Preheat the oven to 160°C (fan). Then cut into slices about 4-5 mm thick. Place on baking sheets lined with baking paper and bake in the preheated oven for about 12-15 minutes. Let rest on the baking sheet for about 2-3 minutes, then place on a wire rack. For the filling, bring the butter and sugar to a boil until the sugar has dissolved. Then stir in the maple syrup and cream, bring back to a boil briefly, and remove from the heat. Let cool for about 2-3 minutes. Meanwhile, finely chop the chocolate (ideally in a blender) and place it in a bowl. Pour over the warm caramel mixture and stir to dissolve the chocolate. If there are any leftover chocolate chips, heat them briefly again in a water bath to create a smooth cream. Chill for a few more minutes if necessary, so the mixture is spreadable. Assemble two cookies with the cream by spreading one with the cream, placing a second one on top, and pressing down slightly if necessary (please be careful, as the cookies are very delicate). If you like, you can decorate them with chocolate. Makes about 30 cookies.
