Ingredients for 1 servings:

  • 200 g whole wheat flour
  • 1 pack of cream of tartar baking powder
  • 2 medium-sized eggs (organic)
  • 100 g margarine, semi-skimmed
  • 250 ml milk, lactose-free (0.3%)
  • 2 tsp, levelled cocoa powder
  • 1 tsp, leveled sweetener (stevioside)
  • 1 pinch(s) vanilla powder (bourbon vanilla)

Mix all ingredients, except the cocoa powder, together. The batter should taste so sweet that you’d think you’d “sweetened” it (don’t worry, it’ll taste perfect after baking). Pour 2/3 of the batter into a small baking dish (e.g., a disposable 1-liter aluminum baking dish). Mix the remaining third with the cocoa powder, add more sweetener if desired, and spread evenly over the light batter. Using a fork, fold in the dark batter in a spiral pattern. Bake in a preheated oven at 180°C (convection oven) for 40 minutes. The cake has a total of 1,300 kcal. If you cut it into 8 slices and serve 2 per person, that’s only 325 kcal per person.
