Ingredients

for the light dough:

  • 300 g Spelt flour
  • 3 tsp Baking powder
  • 200 g Sugar
  • 2 packet Vanilla sugar
  • 4 Eggs
  • 250 g Margarine
  • 200 g Sour cream

for the dark dough:

  • 2 tbsp Cocoa powder
  • 1 tbsp Milk

Instructions

  • Mix the flour and baking powder for the light dough, then add the remaining ingredients. Whisk with the hand mixer first on the low level, then on the highest level to form a smooth dough.
  • Preheat the oven to 180 degrees (or convection 160 degrees). Grease a loaf pan and dust with breadcrumbs or flour. Pour half of the light-colored dough into the pan. Stir in the other half of the milk and cocoa powder. Put the dark on top of the light dough and use a fork to pull it spiral-like through the dough, creating a marble pattern.
  • Bake in the hot oven on the middle rack for about 60 minutes. Then take the cake out of the oven and let it cool down in the tin for about 10 minutes. Then fall out of the mold and let cool down completely.
  • Dust with powdered sugar or cover with melted chocolate couverture as desired.
