Banana Muffins with Delicious Cinnamon Crust

Ingredients
 

  • 250 g Spelt flour
  • 2 tsp Baking powder
  • 2 tbsp Sugar
  • 2 tbsp Honey
  • 50 g Melted butter
  • 2 Bananas
  • 5 tbsp Milk
  • 2 Eggs
  • 1 pinch Salt
  • 40 g Raisins or baking-proof chocolate drops
  • 40 g Coarse chopped walnuts

for the crumble:

  • 2 tbsp Sugar
  • 2 tbsp Flour
  • 1 tbsp Butter
  • 0,5 tsp Cinammon

Instructions
 

  • Mix the flour, baking powder, salt, sugar, butter and a mashed banana together in a bowl. Mix the eggs with honey and milk in another bowl. Then add to the flour mixture and briefly mix everything together.
  • Halve the second banana lengthways and cut into thin slices. Fold these with the raisins or chocolate drops and walnuts into the batter.
  • Spread the batter in a prepared muffin tin. For the crumble, use your hands to process the above ingredients into fine crumble. Sprinkle over the muffins. Bake in the preheated oven at 190 degrees (or fan oven 170 degrees) on the middle rack for about 15-20 minutes.
