Spareribs are not just grilled, spareribs are celebrated

Finely grate the onion and press the garlic. Heat the oil in a pan and sauté both briefly. Sprinkle the sugar over the onion. Pour in 100 ml of water, ketchup, and vinegar. Simmer gently for about 10 minutes. Season with mustard, Worcestershire sauce, Tabasco, and salt. Season again to taste. Toss the spare ribs in the hot sauce, cover, and refrigerate until ready to grill. Some of the remaining marinade can be used to coat the grilled food and/or simply brought back to a boil and served as a sauce (both are best). The marinade is sufficient for about 1200 g (1.2 kg) of spare ribs.
