Ingredients for 3 servings:
- 250 g flank steak
- 100 g sea salt
- 100 g raw cane sugar
- 2 tbsp, heaped spice mix (Chimi Churri – Argentinian spice mix)
Instructions
Working time approx. 10 minutes; Rest period approx. 2 days; Total time approx. 2 days 10 minutes
Flatten the steak with your hand and work the chimi churri into the meat on all sides. Mix the salt and sugar thoroughly. Place the steak in a ziplock bag and cover with the salt/sugar mixture. Refrigerate for 2 days. Turn occasionally. Rinse the breading and slice the steak thinly.
