Marinated grilled vegetables

Ingredients for 2 servings:

  • 2 small zucchini
  • 1 bell pepper(s), red, yellow or mixed
  • 5 mushrooms
  • 1 eggplant(s)
  • 2 onions
  • 3 tbsp tomato paste
  • 3 tbsp olive oil or melted herb butter
  • 2 tbsp soy sauce
  • 1 tsp lemon juice
  • 1 tsp sugar or honey
  • 2 garlic cloves
  • chili powder
  • curry powder
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 40 minutes

Cut the vegetables into large cubes, slices, or rings and place in a baking dish or bowl. In a small bowl, combine the tomato paste with olive oil, soy sauce, lemon juice, and sugar. Crush 1 garlic clove and stir in. Slice the second garlic clove and stir in. Season with chili powder, curry powder, salt, and pepper. Brush the vegetables with the marinade and let it sit for a few hours. Cook the vegetables in aluminum pans on the grill; this may take some time. Tip: The vegetables can also be put on skewers or fried in a pan with a little oil.
