Marinated herring

Ingredients for 4 servings:

  • 2 pt. fish fillet(s) (matje herring)
  • 1 large onion(s), finely sliced
  • 2 gherkins, finely diced
  • 300 ml buttermilk
  • 100 g sour cream or creme fraiche
  • 1 tbsp oil

Working time approx. 15 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 15 minutes

Wash the herring and, if too salty, soak it in cold water for a while, then pat dry with a paper towel. In a bowl, combine the buttermilk with 2 tablespoons of sour cream or crème fraîche and add the oil. Add the herring, onion, and 1-2 gherkins. Cover and let stand in the refrigerator overnight. Serve with boiled potatoes.
