Marinated herring with boiled potatoes, Mama style

Ingredients for 8 servings:

  • 3 jars of Bismarck herring(s), 500 g each, in marinade
  • 7 cups sour cream, 200 g each
  • ½ large onion(s) , or 2 small
  • 1 apple
  • 3 m.-large gherkin(s), (Spreewald)
  • 1 bay leaf
  • 15 peppercorns
  • 8 allspice berries
  • some sugar or liquid sweetener
  • Milk

Instructions

Working time approx. 35 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 35 minutes

an ideal light lunch on hot summer days.

Drain the herring, remove any fins, cut into small pieces, and place these in a large bowl. Dice the cucumber very finely and add to the herring. Wash, peel, and very finely dice the apple and add it to the bowl with the herring. Peel the onion and cut it into thin slices, quarter the slices, cut them into individual pieces, and add them to the bowl. Add the peppercorns, allspice berries, and bay leaf. Mix the sour cream with a little milk until creamy. Add the cream to the other ingredients in the bowl. Mix all ingredients well. Season to taste with a little sugar or sweetener. Cover and let it marinate in the refrigerator for about 12 hours. Season again with sugar or sweetener and stir well before serving. Boiled potatoes go best with this. The marinated herring is served cold with hot potatoes.
