Ingredients for 4 servings:
- 4 pork chops
- 3 onions
- 1 tbsp butter
- 1 bunch basil cut into strips
- 3 sprigs of thyme, chopped
- 8 tbsp balsamic vinegar
- 1 bay leaf
- n. B. Salt
- n. B. Pfeffer
- e.g. paprika powder
- 2 eggs
- 4 tbsp flour
- 125 g breadcrumbs
- 5 tbsp olive oil
- 2 zucchinis
- 200 g cherry tomatoes
- 2 garlic cloves
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 52 minutes

Dice the onions. Sauté 1/3 of them in 1 tablespoon of butter until translucent. Mix with basil, thyme, balsamic vinegar, bay leaf, salt, pepper, and paprika. Pour over the meat and marinate for 60 minutes. Beat the eggs. Coat the chops in flour, eggs, and breadcrumbs. Press the breading onto the chops. Fry in 4 tablespoons of olive oil for about 12 minutes. Slice the zucchini, halve the tomatoes, and dice the garlic. Sauté the remaining onions and garlic in the remaining oil. Add the zucchini and tomatoes and sauté for 5 minutes. Season with salt and pepper. Serve the chops with the vegetables.
