The perfect marinated pork and knöpfle in tomato sauce recipe with a picture and simple step-by-step instructions.
- 250 g Spaetzle
- 400 g Pork schnitzel
- 6 tbsp Olive oil
- 2 finely grated Garlic cloves
- Chilli to taste,
- 1 tbsp Fennel seeds
- 1 tbsp Grains of paradise
- 1 Onion
- 400 g Pureed tomatoes
- 0,5 bunch Spring onions, cut into thin rings
- Black pepper from the mill
- 1 pinch Sugar
- Salt
- Put the olive oil in a bowl, add the chilli and the grated garlic. Roast the grains of paradise and fennel seeds in a pan without fat until the grains of paradise start to jump and then grind them in a mortar and add them to the olive oil immediately. Now add a little salt and pepper and stir. Now cut the schnitzel into strips and add to the marinade, halve the onion, cut into fine strips, add to the meat and mix everything well and let it steep for about 2 hours.
- Heat a pan – you don’t need to add oil because the meat has enough oil. Now put the meat in a pan and sear it while turning and then deglaze with the pureed tomatoes, simmer for about 10 minutes at the lowest temperature, then season with salt, pepper and possibly sugar, the spaetzle (Knöpfle) , leave to stand for another 5 minutes with the stove switched off and then serve and sprinkle with the spring onion rings.
