Ingredients for 4 servings:
- 400 g salmon fillet(s)
- 4 lemons, untreated
- 1 bunch of dill
- Pepper (pink peppercorns), to taste
- some salt, preferably fleur de sel
- some pepper, freshly ground

Cut the well-chilled salmon fillet into very thin slices using a very sharp knife. Arrange on a platter and drizzle with the juice of 2 lemons. Add the finely chopped dill and pink peppercorns and season with salt and pepper. Finally, top with the remaining 2 sliced lemons. Cover tightly and refrigerate for a few hours, ideally overnight. The marinated salmon also tastes great with shavings of Parmesan cheese and/or drizzled with olive oil.
