Marinated Tuna on Cucumber Chutney with Avocado Topping
The perfect marinated tuna on cucumber chutney with avocado topping recipe with a picture and simple step-by-step instructions.
for the cucumber chutney
- 1 Small cucumber
- 1 tsp Grated ginger
- 1 Onions small
- 1 pinch Chilli flakes
- 1 tsp Frozen dill
- 1 tbsp White balsamic vinegar
- 1 tbsp Extra virgin olive oil
- 1 tsp Walnut oil
- Salt and pepper
- 1 pinch Sugar
for the marinated tuna
- 200 g Tuna sushi quality
- 1 tsp Lemongrass
- 1 tsp Grated ginger
- 1 tsp Walnut oil
- 1 tbsp Extra virgin olive oil
- 1 tbsp Lemon juice
- 1 pinch Sugar
- Salt and pepper
for the avocado topping
- 1 Fresh avocado
- 1 Peeled garlic clove
- 2 tbsp Lemon juice
- Salt and pepper
Cucumber chutney
- Peel and core the cucumber (“land cucumber”) and cut into small cubes. Peel and finely dice the onion. Sweat the onion pieces together with the grated ginger and the chilli in olive oil over low heat until they are translucent. Add sugar, deglaze with vinegar, remove from heat and allow to cool. Stir in the oils and season with salt and pepper. Add the cucumber cubes and dill, mix everything and season again.

- Mix lemon juice with sugar, salt and pepper and then work in the oils. Cut the tuna into fine cubes and mix with lemongrass and ginger. Pour into the marinade and mix well.
Avocado topping
- Remove the stone and peel from the ripe avocado, finely dice the pulp and immediately drizzle with lemon juice so that it does not turn brown. Season with salt and pepper, mix in chopped or pressed garlic.
serving
- Layer half of each of the three components on two plates with the help of an appetizer ring to form a green-red-green tower: the cucumber chutney at the bottom, the tuna in the middle and the avocado at the top. Press down each layer with the stamp, but only lightly on the avocado as it is very soft. Enjoy your meal!
vegetarian variation
- Instead of tuna, I used tomatoes for a vegetarian: skinned, pitted, cut into cubes and otherwise prepared in the same way as the fish.
and the icing on the cake is still missing …
- What is missing here (had neither potatoes nor patience), but actually still belongs on top of the turret: a Rösti thaler with the diameter of the turret.
No starter ring available? No problem!
- Because you can also build the turret with a sawed-off plastic pipe from the hardware store (as seen on TV, presented by a star chef!). Press the mass into place with a Kölsch glass (instead of a stamp), which has a slightly smaller diameter than the pipe.
