Marinated Turkey Fillet in Celery Vegetables
The perfect marinated turkey fillet in celery vegetables recipe with a picture and simple step-by-step instructions.
for the marinade
- 3 piece Mandarins
- 3 Toes Garlic
- 2 tablespoon Semi-Dry white wine
- 1 tablespoon Worcester sauce
- 3 tablespoon Chili sweet and sour sauce
- 1 Knife point Turmeric
- 1 tablespoon Estragon mustard
- 1 half a tsp Salt
- 1 tablespoon Curry
for the celery vegetable sauce
- 500 g Celery
- 5 piece Spring onion
- 5 piece Rapeseed oil
- 1 tablespoon Sugar brown
- 1 tablespoon Vegetable broth powder
- 1 tablespoon Mandarin juice
- 4 tablespoon Creme fraiche Cheese
Meat marinade
- Halve the tangerines and press out the juice – cut the garlic into thin slices – mix the tangerine juice and garlic leaves with all the other ingredients of the marinade in a large sealable container – put in the premium turkey fillets and cook for at least 2 hours. Let it marinate (also overnight)

- wash the celery and peel off the coarse threads – cut into small pieces – wash the spring onion and cut into small rolls

- Sweat spring onions in hot oil – sprinkle with brown sugar and caramelize, then remove from the pan and keep warm in a large roaster – put celery in the pan and roast – season with vegetable stock powder and a little salt – also put celery in the roaster with the spring onion

- Now remove the turkey fillet pieces from the marinade and fry them well all around in hot oil (keep the marinade, it goes with the sauce!) – then place the fried turkey pieces in the roasting pan with the vegetables
- Deglaze the roasted aromas in the pan with a little tangerine juice – add the marinade and bring everything to the boil briefly – then pour this sauce over the meat and vegetables in the roaster – finish cooking in the oven at 130 degrees Celsius for about 30 minutes
Refine the sauce
- After the cooking time, take the turkey fillet pieces out of the roaster and keep them warm – put the vegetables and the resulting sauce back into the pan – refine the vegetable sauce with creme fraiche, season again – cut the turkey fillet diagonally into slices and place these slices back in the vegetable sauce – turkey slices Let it soak in the sauce for 5 minutes and then serve with rice – place a few celery leaves on the plate as a decoration
