Ingredients for 1 servings:
- 500 g zucchini, small
- 8 tbsp olive oil
- ½ bunch flat-leaf parsley
- ½ bunch basil
- 2 cloves garlic
- wine vinegar
- Salt and pepper, black, from the mill
Instructions
Working time approx. 40 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 40 minutes
Clean and wash the zucchini and cut into 1/2 cm thick slices. Fry the slices in about 6 tablespoons of olive oil until light brown on both sides, then drain well. Finely chop the herbs and garlic and mix with the remaining oil and vinegar. Layer the zucchini in a bowl, season with salt and pepper, and pour the stock over it. Let it marinate well – ideally overnight!
