Ingredients for 4 servings:
- 600 g zucchini, small
- 1 bunch of parsley
- 3 garlic cloves
- 8 tbsp olive oil
- 2 tbsp balsamic vinegar, white
- Salt

Zucchini in a scapece
Wash the zucchini, dry it, and cut it into slices about 3 mm thick. Heat four tablespoons of oil and fry the zucchini until golden brown. Remove from the oil, season with salt, and let cool. Arrange the zucchini in layers in a bowl, brushing each layer with finely chopped parsley, finely chopped garlic, and the remaining olive oil. Cover and refrigerate the vegetables for one to two days, then serve cold.
