Ingredients for 4 servings:
- 1 kg potatoes, waxy
- salt and pepper
- 1 tsp caraway seeds
- 1 large onion(s)
- 1 apple, sour
- 2 gherkins
- 1 bunch of chives
- ½ bunch of dill
- 4 tbsp meat broth, strong
- 3 tbsp white wine vinegar
- 1 tsp mustard, hot
- 1 tbsp mayonnaise (to taste, Miracle Wip or homemade)
- 4 tbsp oil
- 1 tsp sugar
- 6 slices of ham
- ½ bunch parsley

Boil the potatoes with their skins on in salted water with caraway seeds. Rinse briefly, peel, slice, and place in a bowl. Finely dice the peeled onion and gherkins, as well as the peeled and cored apple. Chop the chives and dill. Mix the meat broth with the mustard, sugar, vinegar, and oil. Add the herbs, apple, onion, and gherkins to the potatoes and stir in the mayonnaise. Season to taste and garnish the salad with parsley, cucumber slices, and bacon. Tip: I prepare the potato salad the day before with all the ingredients except the apple and mayonnaise. One to two hours before serving, I add the apple pieces and mayonnaise, in amounts to taste, to the salad.
