Marinated zucchini with mozzarella

Ingredients for 4 servings:

  • 1 kg zucchini
  • Salt
  • 4 spring onions
  • 2 carrots
  • 5 tbsp balsamic vinegar
  • 6 tbsp oil (olive oil)
  • 1 tsp mustard, medium hot
  • 125g mozzarella
  • Black pepper, freshly ground

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash the zucchini, remove the stems and flower ends, and slice very thinly, ideally using a bread maker. Bring plenty of salted water to a boil and blanch the zucchini slices for about 1 minute. Pour into a sieve and drain well. Trim and wash the spring onions and slice diagonally into fine rings. Wash, peel, and finely dice the carrots. Mix the balsamic vinegar, olive oil, mustard, salt, and pepper to make a vinaigrette. Add the carrots and onions and mix well. Pat the zucchini slices dry and arrange them decoratively on a large or two small platters, season with salt and pepper. Drizzle evenly with the vegetable vinaigrette and let marinate, covered, for at least 45 minutes. Before serving, cut the mozzarella into very small cubes and sprinkle over the marinated zucchini.
