Ingredients for 1 servings:

  • 100 g almond(s), ground
  • 50 g powdered sugar
  • 1 shot of Amaretto or orange juice
  • 1 tbsp water to taste
  • 1 shot of orange juice (or more Amaretto) to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

e.g. for marzipan potatoes – also suitable for baked apples as a filling

Mix the ground almonds with the powdered sugar and add a dash of Amaretto (or orange juice). Knead thoroughly first. It’s incredibly easy to misjudge the amount of liquid, so it’s best to knead after each addition of liquid. Now add orange juice, Amaretto, and water to taste, but only a little at a time. The final mixture should be sticky but not too soft. It will harden further, though. Tip: Roll small balls and roll them in cocoa powder. This makes delicious pralines (marzipan potatoes).
