Ingredients for 4 servings:
- 1 melon(s) (cantaloupe, alternatively Galia)
- 2 beef steaks (alternatively pork minute steaks)
- 2 bunches of arugula
- ½ tube(s) tomato paste
- ½ lemon(s), the juice
- ½ tsp cumin
- some pepper
- some salt
- some paprika powder
- possibly chili powder
- some oil for frying
- 100 ml oil (walnut oil) for the dressing
- water if needed, for the dressing

Season the steaks and fry in a hot pan until medium-rare on both sides. Let them rest and then cut into small pieces. Deseed and peel the melon, also finely dice it. Wash and trim the arugula, and then slice it in half. Place everything in a bowl and mix. For the dressing, mix the tomato paste with lemon juice and the spices. Then add the roasting fat from the steaks and mix in, finally whisking in the room-temperature walnut oil. Add water if needed. Arrange the steaks and salad on plates and serve immediately. Serve the dressing separately. It sounds strange, but it’s really good. Tip: As already mentioned, you can alternatively use the cheaper minute steaks, but then season them generously with cumin.
