Marzipan cookies with lime glaze

Ingredients for 1 servings:

  • 200 g marzipan paste
  • 1 vanilla pod(s)
  • 150 g butter, soft
  • 40 g powdered sugar
  • 3 egg yolks
  • 1 egg(s)
  • 3 tbsp Amaretto
  • 5 tbsp milk
  • 300 g flour (type 550)
  • 250 g powdered sugar
  • 1 lime(s)
  • 25 g pistachios, chopped, for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Crumble the marzipan mixture and scrape the vanilla seeds from the pod. Carefully mix the butter, vanilla seeds, and marzipan using a hand mixer. Add the powdered sugar and beat until creamy. Gradually stir in the egg yolk, egg, Amaretto, and milk. Mix the flour into the batter. Fill a piping bag with a star nozzle and pipe S-shaped shapes onto a baking sheet lined with baking paper. Bake in a preheated oven at 175°C (150°C fan/convection oven, gas mark 2-3) for about 20 minutes. Cool on wire racks. For the glaze, squeeze the limes. Mix the powdered sugar and enough lime juice to create a thick glaze. Cover half of the pastry with the glaze and sprinkle with chopped pistachios. This recipe has been in my collection for 8 years and has been a standard Christmas treat ever since.
