Mascarpone strawberry cake

Ingredients for 1 servings:

  • 350 g flour
  • 250 g butter
  • 200 g sugar
  • 6 eggs
  • 2 packets of vanilla sugar
  • 1 packet of baking powder
  • Butter for the baking tray
  • 500 g mascarpone
  • 250 g quark
  • 100 g sugar
  • 1 lemon(s), the juice
  • 1 ½ kg strawberries
  • 2 packs of cake glaze
  • 500 ml apple juice
  • 40 g sugar

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 30 minutes

Cream the butter with sugar, vanilla sugar, and eggs until fluffy. Stir in the flour and baking powder. Pour the batter into a buttered roasting pan and bake at 180°C for 30 minutes. Let cool. Mix the mascarpone with the sugar, quark, and lemon juice and spread over the cake. Clean the strawberries, halve them, and place them on the cream. Mix the glaze with a little apple juice, then bring the remaining apple juice to a boil with the sugar. Add the powder, bring to a boil once, let cool slightly, and spread over the strawberries.
