Ingredients for 1 servings:
- 1 kg plum(s) (greengage)
- 1 sprig(s) peppermint
- 1 ½ lime(s), the juice
- 1 tsp lime zest, finely chopped
- 1 tbsp schnapps (mirabelle schnapps or similar)
- 333 g gelling sugar (3:1)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Reineclaude, Greengage, Ringlotte, makes about 5 glasses
Pit the greengage plums, halve them, and puree them. Pluck the leaves from a peppermint sprig and cut them into small strips. Tear off the zest from one lime and finely chop them. Squeeze the juice of 1 1/2 limes. Combine everything in a sufficiently large pot with the gelling sugar and a tablespoon of mirabelle plum schnapps (you can, of course, omit it, but it adds extra finesse to the jam) and bring to a boil while stirring. Continue to boil for 4 minutes, stirring continuously. Test for setting and immediately fill prepared jars to the brim and seal. This yields approximately 5 jars of 250 ml each. It tastes fantastic, and I’m glad our greengage plum tree is still brimming with fruit…
