Mascarpone with strawberries and meringue

Ingredients for 8 servings:

  • 500 g strawberries, fresh
  • 150 g sugar
  • 10 ladyfingers
  • 1 kg mascarpone
  • 4 packets of vanilla sugar
  • 200 ml cream
  • 1 pack of cream stiffener
  • 80 g meringue(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Total time approx. 40 minutes

First, chop the strawberries into small pieces and add 50g of sugar. Wait until the juice forms. Separate the strawberries and the juice, keeping both. Briefly dip the ladyfingers in the resulting juice and spread them on the bottom of a bowl. Beat the mascarpone with the juice until creamy, add 2 sachets of vanilla sugar and 100g of sugar. Whip the cream with the sachet of cream stiffener until stiff. Also add 2 sachets of vanilla sugar. Fold the stiffly whipped cream into the mascarpone cream and then stir in the strawberries. Spoon the mixture onto the ladyfingers and spread evenly. Finally, cut the meringues into small pieces and arrange them on top of the dessert.
