Ingredients for 4 servings:

  • 6 apricot(s), fresh
  • 2 tbsp apricot jam
  • 1 tbsp sugar
  • 1 pack of cream pudding powder
  • 400 ml milk

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 10 minutes

Wash the apricots, halve them, remove the stones, and blanch them in boiling water. Peel the skins from the apricots. Set aside 4 apricot halves for decoration. Puree the remaining apricots. Take 8 tablespoons of the milk and mix it with the custard powder and 1 tablespoon of sugar. Bring the remaining milk to a boil with 2 tablespoons of apricot jam and the apricot puree, then remove from the heat and add the mixed custard powder. Spoon the pudding into four serving bowls and place an apricot half on top of each, rounded end up. Allow to cool and refrigerate until ready to serve.
