Mashed potato – almond – coins

Ingredients for 4 servings:

  • 600 g potatoes
  • 2 eggs
  • 2 tbsp Flour, Type 405 (heaped)
  • 75 g almond(s), sticks
  • Salt
  • pepper
  • nutmeg
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the potatoes and boil them in plenty of water. When they’re tender, drain them, peel them while still hot, and mash them. Knead the potato mixture with the eggs, flour, salt, pepper, and a pinch of nutmeg. If the dough is too sticky, add more flour. Finally, knead in the slivered almonds. Heat oil in a pan. Roll portions of the potato dough into balls, flatten them, and fry in hot oil until golden brown.
