Ingredients for 4 servings:
- 4 portions of mashed potatoes, homemade or a prepared ready-made product
- 4 tomatoes, or cauliflower florets or other vegetables
- 4 eggs
- n. B. Cheese, grated
- some butter flakes
- Salami, ham, or spring onions, optional
- Margarine, for the casserole dish
- possibly spice mix (pizza seasoning)
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Recycling leftovers
Grease the baking dish and spread the mashed potatoes into it. It should fill the dish about halfway. Then, using a spoon, make small indentations. Dice the tomatoes or cut the pre-cooked vegetables into nice pieces and arrange them on top of the potato mixture. If you like, you can also add diced salami or ham and the spring onions in rings. Carefully add the beaten eggs to the indentations. Season everything with salt, pepper, and, if you like, a little pizza seasoning. Finally, sprinkle with grated cheese and scatter a few knobs of butter on top. Place in the oven at 180-200 degrees Celsius and bake for about 20 minutes, after checking the temperature. When everything is a nice golden yellow to golden brown, remove from the oven and serve. This recipe is very versatile, and you can be as creative as you like, even with the quantities!
