Ingredients for 2 servings:
- 500 g potatoes, floury
- 100 g cream
- 20 g butter
- 2 tbsp cream cheese
- 2 tbsp mascarpone
- 2 thin spring onions
- 2 tbsp tomatoes, dried, marinated in oil
- lemon juice
- salt and pepper
- nutmeg

Peel the potatoes, finely dice the spring onions, and finely dice the pickled tomatoes. Boil the potatoes in salted water until tender, drain, mash, and mix with butter, cream cheese, and mascarpone. Add enough cream to form a smooth mixture. Add the onions and tomatoes, and season with lemon juice, salt, pepper, and nutmeg.
