Ingredients for 4 servings:
- 1 kg potatoes
- 500 g onion(s), sliced, roasted
- 200 g butter, melted, browned
- 500 ml buttermilk
- salt and pepper
- 2 garlic cloves, crushed

a delicious and healthy main course without meat
Peel and boil the potatoes. Then mash them until they are still slightly crumbly. Mix the melted, browned butter with the garlic. Preheat the oven to 200°C to 220°C (top/bottom heat). In an ovenproof dish, place a loose, crumbly layer of mashed potatoes, a layer of fried onions (homemade, of course), another layer of potatoes, a layer of brown butter with garlic, and so on. Season all layers with salt and pepper. The final layer should be fried onions. Then place the dish in the preheated oven and let it brown for 5-10 minutes. Now, depending on the type of potato, pour the buttermilk over the potatoes; it will then seep through and sometimes sizzle. Place it back in the preheated oven for a few more minutes. Caution: It’s best to stay close to the oven to prevent them from turning black. The potatoes should only look crispy on top, and the buttermilk should evaporate a little in the potatoes. The consistency is light and creamy, and thanks to the butter, it’s also high in calories. Serve with ice-cold buttermilk and a green salad. Note: All measurements are approximate, as I never cook the mashed potatoes according to a recipe, and the quantities are based on rough estimates.
