Mashed potatoes with a twist

Ingredients for 2 servings:

  • 8 potatoes
  • 150 ml olive oil
  • 1 onion(s), finely diced
  • 2 garlic cloves, finely chopped
  • ½ bunch basil, cut into fine strips
  • 6 tomatoes, dried from the jar, cut into small strips
  • Salt
  • 100 g pine nuts, roasted
  • pepper
  • some nutmeg, grated

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

with olive oil, dried tomatoes and basil

Peel the potatoes and boil in salted water. Sauté the onions and garlic in olive oil, then remove from the heat. Chop all other ingredients and combine them in a bowl. Add the potatoes and olive oil along with the onion and garlic mixture. Roughly mash everything together and season with salt, pepper, and nutmeg. If desired, you can stir in the toasted pine nuts. It tastes wonderfully aromatic and goes well with salad or simply with a nice piece of meat or fish.
