Mashed potatoes with endive salad and fried black pudding

Ingredients for 4 servings:

  • 1 kg potatoes, floury
  • 1 small head of endive lettuce
  • 1 ring/s black pudding, for frying
  • 1 cup of milk, or more if needed
  • 100 g butter
  • 1 tsp nutmeg powder
  • Salt
  • Fat or oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Mashed potatoes – recipe from my mom

Peel the potatoes, cut into large chunks, and boil until tender. Meanwhile, trim the endive. Remove the tough outer leaves, remove the stalk, and finely slice the remaining endive. Mash the cooked potatoes. Add milk, butter, nutmeg, and salt. Fold the endive into the mashed potatoes and set aside. Slice the black pudding and fry in a hot pan with a little fat until crispy. Make sure to place a splash guard over the pan! Arrange the cooked sausage slices on top of the endive and mashed potatoes and serve.
