Mashed potatoes with leeks in wine sauce

Ingredients for 2 servings:

  • 6 potatoes, floury
  • 1 bunch of chives
  • turmeric
  • rosemary
  • 2 leek(s)
  • 200 g sour cream
  • 100 ml white wine
  • 1 large garlic clove(s)
  • Five-spice powder
  • salt and pepper
  • 1 orange(s), juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Mashed potatoes with chives, leek in sour cream, orange wine sauce

Peel the potatoes and cut into small pieces. Juice the orange. Add 1/3 of the juice from the squeezed orange, a little salt, turmeric, and rosemary to the potatoes in the cooking water. Cook everything for at least 20 minutes, until the potatoes are soft enough to be easily mashed with a fork. Slice the leeks and then wash them thoroughly. Pour the white wine into a saucepan and add 2/3 of the juice from the squeezed orange. Add the five-spice powder, sour cream, finely chopped garlic, and leek slices. Simmer everything on low heat for about 15 minutes. Meanwhile, finely chop the chives. When the potatoes are soft, pour some of the cooking water into a separate bowl and discard the rest. Mash the potatoes in the pan with a fork and add some of the potato water and chopped chives continuously until the mashed potatoes and the water have formed a mushy mass. Add a little more salt to taste. Goes well with fish or meat.
