Ingredients for 1 servings:
- 10 g coconut flakes
- 300 ml coconut drink, unsweetened (not coconut milk from a can)
- 1 small banana(s), very ripe (approx. 100 g)
- 60 g oat flakes, fine
- 1 tsp matcha powder
- 1 pinch of vanilla, real, ground
- 1 pinch of salt

Lightly toast the coconut flakes in a non-stick pan without fat and set aside. In a saucepan, bring the coconut milk, oats, salt, and vanilla to a boil and let it swell over low heat. Cut a few slices from the banana for decoration. Mash the remaining banana with a fork and mix with the matcha powder. When the oats have reached the desired consistency, remove the pan from the heat and mix with the banana-matcha mixture. Top the porridge with the toasted coconut flakes and banana slices and serve sprinkled with a little more matcha powder, if desired.
